Paleo Almond Butter Cups

If you asked me what my favorite food is at any point in my life, I would tell you chocolate. I have stayed true to this, and I think there’s a reflection of it in my work. My mom told me just last week that I should probably add some color to my recipes as everything had to do with chocolate. Naturally, I uploaded my cosmic brownie recipe because it had sprinkles, and then I made these because the liners are blue and the inside is yellow! It’s a win-win for everyone, you guys get some color and I get to keep making yummy chocolate desserts for you and me to enjoy!

So let’s talk Almond Butter Cups! These lovely chocolate treats are a simple and easy way to get your chocolate fix, but with a little added pizzazz!

I used Almond Butter Powder because I think it’s a cool and unique product to have on hand! Normally people use PB2 or peanut Powder, but Peanuts upset my stomach and I know a lot of people have peanut allergies! I figured why not let you in on one of my favorite products? I use this Almond butter powder in a pinch if I have run out of nut butter, I also use to make edible cookie dough (that will be another post), and it’s a fun addition to yogurt, smoothies, oatmeal, etc.! I even add it into my Chocolate Milk recipe!

When it comes to melting chocolate this always worries me, because I almost ALWAYS burn the chocolate. In the video, I show you my Sonya proof method to melting chocolate gently and without the use of a stove or microwave!

All you need is one large glass bowl and one smaller glass bowl. Simply boil some water and pour it into the larger bowl. My husband, Daniel is from South Africa and he is a firm believer that everyone should have an electric kettle, and now that I own one I’m a believer as well! You can boil water in less than 5 minutes without any hassle and is perfect for making tea while you wait for your almond butter cups to set!

This is the Electric Kettle we use here, we sue a gooseneck kettle because we love to make pour-over coffee, but if you just want a tried and true simple kettle, here is a great one!

Now before you pour in the boiling water make sure you put your chocolate & coconut oil in a smaller bowl and place it in the larger bowl. Fill up the large bowl with boiling water just a smidge higher than the chocolate in the smaller bowl. and then watch it melt with ease! If you have any questions feel free to watch the video below!

Ingredients

  • 1 Cup Dark chocolate chips

  • 3 Tbsp Coconut oil

  • 1/4th cup almond milk

  • 1/3rd cup almond butter powder

  • 2 Tbsp agave or maple syrup

Instructions

  1. in a small bowl mix together the almond butter powder, almond milk & syrup together until it is smooth and creamy. If you need more almond milk add one more tablespoon and mix together.

  2. Using the double boiler method melt chocolate chips & coconut oil together, making sure not to burn the chocolate

  3. Place your cupcake liners in the cupcake tin.

  4. pour about 1 to 2 tbs of the melted chocolate in the bottom of your cupcake liners.

  5. Use about 1 Tbsp of the almond butter in the center of the chocolate and smooth to the best of your abilities with a spoon.

  6. Place in the freezer for about 15 minutes.

  7. remove from the freezer and pour more chocolate on top of the almond butter, making sure it is completely covered and there is an even layer of chocolate,

  8. place in the freezer for another 15 to 30 minutes and then remove.

  9. Sprinkle with flaky sea salt and enjoy or save in the freezer for later!
