Pumpkin Muffins // Vegan & Paleo

Since I didn’t want to throw out the batch I threw in a pinch of baking powder, threw them in a muffin pan and baked them! I even almost burned them because I went on a run and forgot they were in the oven. Thankfully Daniel was home and he pulled them out for me.

I didn’t think anything of it, but when I got home I realized they looked pretty darn good! And then I tasted them and realized, they tasted pretty amazing too!

The texture was spot on and I was just amazed! No eggs, no flour, no dairy, no nothing and they were perfect! So this recipe is a two in one type of deal, you can choose to make the pumpkin bites, or you could choose to bake them! Be my guest, as long as you enjoy them!

Pumpkin Muffins

·         1/2 cup pumpkin pure

·         2 tsp pumpkin spice

·         1/4th cup nut butter

·         1 &1/2 cup almond flour

·         1/4th cup maple syrup

·         Pinch of salt  

·         1tsp baking powder

·         Chopped Hazelnuts*

Directions!

Pre-heat your oven to 350 F and grease a muffin tin.

In a large bowl mix together all of the ingredients except for the chopped hazelnuts.

Once combined divide mixture into puffin tin and then sprinkle chopped hazelnuts on top.

Bake for 20-25 min until the edges begin to slightly brown

Let cool, and enjoy!

 

*You can substitute these for anything you have on hand!
